Tasting Notes:
Narai “f” - Miyama Nishiki Rice (48% Rice Milling Ratio) – 14% Alcohol Made using Miyama Nishiki, a classic sakamai from Nagano Prefecture. This variety was born from a sudden mutation when another variety, Takane-nishiki, was exposed to radiation at an agricultural research station in Nagano (a technique called “radiation breeding”). Its production ranks third in Japan (as of 2021), following Yamada-nishiki and Gohyakumangoku, making it a major sakamai in the sake industry. The Flavour profile of this sake provides a rice forward, full-bodied mouthfeel. On the nose, the fresh aroma of steamed white rice followed with a slightly sweet aftertaste of pear the vibrant character and a lively acidity leaves a refreshing crisp finish on the palate.
